We are a commercially licensed brick and mortar (Celiac safe) bakery and coffee parlor in the Historic Medical District of Las Vegas Nevada. We started serving the Sugar and Gluten Free community in June of 2020, at our first pop-up event.

It all started after the city closure during pandemic, I turned to baking to stay busy and to try to make healthy baked goods for myself while living a Keto Lifestyle to ease my PCOS symptoms. I baked sweets and savory breads, so many I started dropping them off as care packages to my closest friends who said they or their husbands could not tell they were sugar free (or gluten free).

I anticipated returning to work but a few weeks into the closure I found out from a phone call I was loosing my position of over 10 years as a GM on the Las Vegas Strip when the company was basically sold without warning or any time for me to prepare.

After feeling lost of what I would or could possibly do, my friend gave the idea of opening a Keto Bakery since I had always wanted my own food business where I could serve my creations. I signed a three year lease on a empty space with zero bones that was in less than great condition. My Fiancé took the biggest gamble ever and built out the bakery for me after working his full time job almost nightly over the course of a year. We threw everything on our personal credit cards as no bank would even consider giving me a loan for my business, that was at that point just a dream.

Fast forward to today and my son and I no longer have to ask friends for favors to host our pop-up shops at their businesses. We now operate the bakery 6 days a week and while the shop isn't open Mondays we are still there or working on the business in some way or out in the streets doing errands together.

Nothing makes me happier than creating something delicious that makes someone smile. I have transformed my traditional professional level cooking and baking into "Keto" just by editing some basic items and eliminating 100% of all ingredients containing gluten and sugar.
